Achiote or Annatto is a widely used condiment around the world. It’s derived from the seeds of Achiote trees (Bixa Orellana) which are native to the tropical region between Mexico and Brazil.

During colonial times, the Spanish and Portuguese brought the trees to Asia, which explains why today it’s used in many countries around the world, including: India, Philippines, Vietnam, Mexico, Jamaica, Venezuela, Puerto Rico, Belize, Trinidad and Tobago, more Caribbean nations as well as parts of West Africa.

Achiote or Annatto is used for two main purposes.

The first it to colour food in a non-synthetic way. This is used both in an artisanal way at home and at an industrial scale to colour all kinds of foods, including: cheese, margarine, butter, beverages, chorizo, desserts, bakery products, among others.

Flavour and Aroma

The second main application is to add flavour and aroma to food.

It’s usually a core ingredient in the mixes used to make sauces, marinate meats and make stews. For example, in Mexico it’s a core ingredient in the “Adobo” used to make Tacos al Pastor and Cochinita Pibil.

Another example is the “Sazon” from Puerto Rico, a savoury mix of seasonings used in everyday dishes to add exceptional taste. Finally, in others areas of Latin America and the Caribbean, it’s used to make “Sofrito”, which is a blend of vegetables and herbs used to season rice, meats and beans.

In terms of taste, it’s most commonly described as peppery with a touch of nutmeg and sweetness. The aroma is described as being similar to pepper with a hint of nutmeg.
