This olive oil is produced by picking the first harvest olives while they are still green in September-October, and cold pressing them the same day without waiting.
After the pressing process, it is kept in chrome tanks in a dark place without being filtered, maintaining the temperature.
Its fruity aroma and high values are felt as bitter in the mouth and burning in the nasal passages.
It is very rich in phenolic compounds and antioxidants, so it is recommended that first harvest olive oils be consumed raw and drunk first.
