Alkanet (Alkanna tinctoria) also known as the dyer's alkanet is a plant belonging to the family Boraginaceae and is endemic to the coastal areas of the eastern Mediterranean. The flowers stand out because of their special blue-purple color and the roots because of their deep red color. The root produces a substance that is widely used as a natural pigment in cosmetics, as well as in foods, wines and liquors, as well as for painting wood and stone. The carrot as a coloring agent is soluble in alcohol and oils, but is insoluble in water. It is used in traditional Indian food under the name Ratan Jot and adds its red color to some versions of Curry. It is also used as a vegetable.
