:Growing naturally in regions with a Mediterranean climate, carob is used for many different purposes, from its tree to its fruit, and from its fruit to its seed. In our country, carob is locally known by names such as "Harnup", "Harup", "Boynuz", "Buynuz", and "Kerti".
Common Misconceptions About Carob Molasses
Because carob production is carried out under vacuum, the temperature does not exceed 60 C. Therefore, the HMF level does not increase. This substance is a compound analyzed as an indicator for production control. A high level of this substance indicates that other undesirable, harmful compounds, such as carcinogens, are also formed at high levels.
Is the Cold Pressing Method Used in Carob Molasses?
The cold process is absolutely impossible in carob molasses production. Cold pressing is used to extract oil from various oilseeds using mechanical methods. This method is used in production below 27 C and is not used in carob production. Production at such low temperatures can cause microorganisms to grow in the resulting product. Preservatives must be used to prevent growth. This would render the product harmful rather than beneficial. It contains no additives, sugar, or preservatives.
