Bitter melon is a climbing plant in the cucurbitaceae family that grows in tropical climates. It blooms and produces fruit in summer. Its flowers are yellow, while its fruit is green when first formed and orange and red when ripe. It is usually collected unripe because when fully ripe, its taste becomes bitter and its vitamin content decreases. The seeds inside the fruit are red and have a sour taste similar to pomegranate. The unripe fruits It contains high amounts of vitamins A and C, beta carotene, phosphorus, potassium, and iron minerals. Bitter melon possesses numerous biological activities thanks to the glycosides, saponins, alkaloids, triterpenes, carotenoids, proteins, fixed oils, and steroids it contains.
