The Richness of Indonesian Coffees
With our Ali Ziya Zade Coffee brand, we offer you the richness of coffee beans grown on Indonesia's tropical and volcanic islands. We process, screen, and grade coffee beans carefully selected from high-quality coffee farmers on the Indonesian islands of Java, Sumatra, Borneo, Bali, Papua, and Sulawesi in our own facilities in Sumatra. After processing, we offer coffee enthusiasts the coffee they enjoy.
Indonesia, a major player in global coffee production, ranks third in the world in production, and Robusta coffee accounts for 3 to 5 of its production. Robusta and Arabica coffee trees possess the exquisite aromatic flavors derived from the volcanic soil and tropical climate of Indonesia's islands. Each micro-coffee farmer carefully cultivates their coffees, which are then wet-processed to create exquisite flavors. Indonesia is also renowned for its diverse specialty coffees, including "Coffee Luwak" (known as the world's most expensive coffee) and "Coffee Mandailing." Coffee was first introduced to Indonesia by the Dutch, who planted coffee trees on the island of Java. Later, in the 17th and 18th centuries, coffee production expanded rapidly to the Bogor and Sukabumi regions of West Java. Because Indonesia has an ideal climate for coffee production, coffee production quickly spread from Java to Sumatra and Sulawesi, and coffee plantations were established on other islands. Sumatra, the largest island, currently accounts for 50 of Indonesia's coffee production. Indonesia's coffee plantations total approximately 1.25 million hectares, of which 950,000 hectares are Robusta plantations and 350,000 hectares are Arabica plantations.
Robusta coffee is grown in many central regions of Indonesia, including Sumatra, Java, Sulawesi, and Flores. These coffee plants grow in highlands located at altitudes between 400 and 900 meters above sea level. The most important Indonesian Robusta coffee beans are grown in Lampung, Bengkulu, Temanggung, Dampit, Flores, Pupuan, and Toraja. Robusta coffees from these regions exhibit a slightly acidic, full-bodied character. Flavor notes often include seductive notes of dark chocolate, caramel, and spices.
For those seeking a smooth and light coffee, Indonesian Sumatra coffee offers a superior coffee experience. Carefully selected from Indonesia's finest coffee farms, these beans are prepared on Sumatra, Indonesia's largest island. The name and characteristics of the coffee vary depending on the island's geography.
The processing method that highlights the coffee's aroma is locally called Giling Basah (wet grinding or wet hulling). This unique Indonesian processing method distinguishes Sumatra coffee from other coffees. This processing method, which highlights the aroma of Sumatran coffees, typically grown in the Mandheling or Gayo Mountains regions, first removes the hulls from the beans. The beans are then left to rest in bags of water for at least a day to ferment. For drying, the beans must have a moisture content of at least 5 . This process reduces the moisture content to 10 . After drying, the beans take on a green color. Finally, the beans undergo a final drying phase, where the moisture content is reduced to 10 . This process reveals the distinctive flavor, aroma, and character of Sumatran coffee beans.
Tasting Notes
The flavor of Sumatran coffees varies depending on the region where they are grown. Mandheling is a full-bodied coffee with notes of dried fruit and exotic notes. Mandheling Reserve is a balanced, low-acidity, and generally the most popular Sumatran variety. Syrupy notes generally predominate. Gayo is full-bodied, consisting of cocoa, exotic fruit, caramel, fresh leafy, and earthy notes.
Flavor Profile
Low acidity is a prominent characteristic of Indonesian Sumatra coffee, resulting in a smoother drink and often preferred by those who enjoy a milder coffee. It also has a distinctive aroma and notes of chocolate and almond. Due to the wet processing method, Sumatra coffee is generally dark in color. Due to the characteristics of the soil in which it is grown, it is particularly ideal for those with stomach problems, as its low acidity has a gentler effect on the digestive system.
Ali Ziya Zade Indonesian single origin coffee is an ideal option for those who find coffee heavy or bitter due to its low acidity. It's suitable for those looking to reduce their sugar intake, as it has a naturally sweet profile. Its light consistency makes it suitable for multiple drinks throughout the day. Indonesian coffee is an attractive option for anyone with diverse palates and preferences.
