Kahramanmaras Tarhana ChipsTarhana chips, a food unique to the Kahramanmaras region, are made by cooking peeled, cracked wheat like rice, mixing it with yogurt, and then drying it.Preparation:Wheat Process: Wheat is ground in a stone mill to separate the husk and turn it into cracked wheat. The cracked wheat is then washed and cooked.Flavor Addition: Cooked cracked wheat is flavored with village yogurt and mountain thyme.Fermentation and Drying: This mixture is left overnight to ferment and sour. It is then spread in a thin, transparent layer over a grass called raw (haci otu) and dried in the sun.
