Another cousin of piper nigrum, the tailed pepper (piper cucuba), more often called cubebe or kissi pepper and sometimes Indonesian pepper, grows wild in Indonesia and more particularly on the islands of Java and Sumatra. These fruits, picked before maturity, are dried in the sun. This pepper has the same characteristics as black pepper, but with its camphor notes and a slight bitterness, its aroma is very fresh, it is powerful and very long in the mouth.It is also known for its aphrodisiac properties! It is remarkable on fresh goat cheese. Very interesting on fish and shellfish as well as with white meats. It is particularly suitable for seasoning vegetables (especially when simply steaming: a few turns of the tail pepper mill and a pinch of fleur de sel just before serving!!). Spice that grows wild in Indonesia on the islands of Java and Sumatra. Autre cousin de piper nigrum, le poivre à queue (piper cucuba) plus souvent appelé cubebe ou poivre de kissi et parfois poivre des indonésiens, pousse à l'état sauvage en indonésie et plus particulièrement sur les îles de java et de sumatra. Ces fruits cueillis avant maturité sont séchés au soleil. Ce poivre a les mêmes caractéristiques que le poivre noir, mais avec ses notes camphrées et une légère amertume son parfum est très frais il est puissant et très long en bouche.Il est aussi connu pour ses vertus aphrodisiaques !. Il est remarquable sur un fromage de chèvre frais. Très intérssant sur les poissons et les crustacés ainsi qu'avec les viandes blanches. Il convient particulièrement pour l'assaisonnement des légumes (surtout lors d'une simple cuisson à la vapeur: quelques tours de moulin de poivre à queue et une pincée de fleur de sel juste avant de servir ! !).
