Phu-quoc black pepper is a true piper nigrum, so it can be compared to the great classics of peppers: Kampot, Malabar. To which it really holds its head high! It is one of the rare peppers that is still cultivated artisanally and harvested by hand by small planters on the island of Phu-quoc in southern Vietnam. The proximity of all the plantations to the sea gives a very specific character to this pepper, always harvested from pepper plants that are about 10 years old. This is what gives a very balanced power to this wonderful pepper and avoids the hyper aggressiveness of peppers harvested from old pepper plants over 20 years old.Try it crushed in a mortar and pestle to spice up mayonnaise! It's exceptional on shellfish: shrimp, langoustines, crabs. It pairs well with raw vegetables and salads. It's excellent on meats and grilled dishes.
