A Century-Old Flavor from Birsalkim Pestil and Köme: Foam Pestil
In the past, pestil (peastil) was dried to meet energy needs during the winter months. This method, which has become a tradition in Anatolia for centuries, brought the generosity and health of nature to the table. How is Foam Pestili Made?
We use only fresh, seasonally harvested grapes in our foam fruit pulp production. These grapes are carefully pressed in a juicer to extract their juice. The juice is poured into a cauldron, and when it reaches a slightly warm consistency, flour is added and carefully mixed. Once this mixture has turned into a dough, it is returned to the cauldron and brought to a boil.
After boiling, the mixture is transferred to a large bowl and whipped with a whisk for approximately 1.5 hours. During this process, the grape pulp foams and reaches a white consistency. The foamy fruit pulp is then dried in the sun using traditional methods and made ready for sale.
