Salep is obtained from the underground tubers of some wild orchid species, which develop in various sizes, similar to hazelnuts and walnuts. After the orchid tubers are harvested, they are boiled in milk in some regions, and in water in others, before being left to dry. Once thoroughly dry, they are ground in a stone mill to form a powder.

In our country, it is collected from its natural habitat in provinces such as Burdur, Kahramanmaras, Kastamonu, and Samsun. However, because the plant is in danger of extinction, its removal is prohibited in dozens of countries around the world, including our own. Unfortunately, however, its trade is free.

Making Salep at Home

Put one liter of milk on the stove and bring it to a boil. Gradually add 3 grams or a heaping teaspoon of Baldo pure salep, stirring occasionally, or using a strainer to prevent clumping. Boil until the mixture reaches a thick consistency. Don't forget to use a boxwood spoon and stir constantly to prevent the mixture from sticking.

You can drink it after boiling for about 15 minutes, but you should let the mixture rest for it to reach its proper consistency. Let it rest for about an hour, then reheat it before drinking. You can use honey or molasses to sweeten. If using sugar, add it along with the salep while boiling. Enjoy!

NOTE: If you make more than you need, store the remaining portion in the refrigerator and drink it within 2-3 days. If it needs to be kept longer, freeze it.
