Carob (Ceratonia siliqua) or carob is an evergreen shrub or tree plant species from the Fabaceae family that grows naturally in regions with a Mediterranean climate and whose pods (fruits) are edible. In our country, carob is also known as "Harnup", "Bornuz", or "Kerti" depending on the region.
Carob Molasses is a product produced by concentrating the must, which is extracted and clarified from the carob fruit, either in the open or under vacuum. In addition to its rich nutritional value, carob also contains phenolic substances. One of these phenolic substances is gallic acid, found in carob. Gallic acid is also an antioxidant. Carob molasses, a food rich in fiber and natural sugar components, also contains protein and fatty acids.
In accordance with the Turkish Food Codex Food Additives Regulation, molasses does not contain any additives.

Keçiboynuzu (Ceratonia siliqua) veya harnup, baklagiller (Fabaceae) familyasindan olup Akdeniz ikliminin hüküm sürdügü yerlerde dogal olarak yetisen ve baklalari (meyveleri) yenen, herdem yesil çali ya da agaç formunda olan bir bitki türüdür. Keçiboynuzu ülkemizde yöreden yöreye 'Harnup, Boynuz, Kerti' diye de anilmaktadir.
Keçiboynuzu Pekmezi ise keçiboynuzu meyvesinden teknigine uygun olarak özütlenen ve berraklastirilan siranin açikta veya vakum altinda konsantre edilmesi ile üretilen üründür. Keçiboynuzu zengin besin degerlerinin yani sira fenolik maddeler de içerir. Bu fenolik maddelerden biri de keçiboynuzunda bulunan gallik asittir. Gallik asit ayni zamanda bir antioksidandir. Lif ve dogal seker bilesenleri bakimindan oldukça zengin bir besin olan keçiboynuzu pekmezi, ayni zamanda protein ve yag asitleri de içermektedir.
Türk Gida Kodeksi Gida Katki Maddeleri Yönetmeligi geregince pekmez katki maddesi içermez.
