This is the water we know makes the Belvida masses special: Serra da Estrela. The flours: We select leguminous and cereal flours. Production: Here the flours are hydrated until the dough forms. When hydration reaches the ideal point, the mixture goes through an extrusion process. In other words, there is a forced passage through bronze molds that serves to give the dough the desired shape. The bronze molds favor the quality of the dough, allow a better adhesion of the sauces and give a more pleasant texture. The rest: We like to think that our masses have a zen attitude to life. Therefore, at this stage, the dough is deposited on traditional Italian trays – "telai per pasta". Afterwards, it goes to the static dryers, where it will rest for long hours.
