Organic Einkorn Bulgur Einkorn wheat was first identified in the Near East 10,000 years ago and is the ancestor of today's cultivated wheat.
The first name given to Einkorn wheat, cultivated by the Hittites and Phrygians, was the Hittite word "Ziz." Later, it was called "Einkorn" and sometimes "Kaplica."
Today, it is still cultivated in Northern Anatolia, the Balkan countries, Germany, Switzerland, Spain, and Italy.
The structure of Einkorn wheat: Einkorn wheat has a 2n chromosome structure and is different from the Triticum dococcum (Gernik or Kavilca) variety of wheat, called Emmer in foreign languages and cultivated in the Kars region of Turkey.
Known as a disease and pest resistant variety due to its single spikelet and dense husk structure, Siyez Wheat is highly competitive in arid conditions and poor soils. Studies have shown that it has a higher oil content and a higher yellow lutein content than bread wheat.
In addition to the health benefits associated with whole grain consumption and its low glycemic index, it has also been found to be richer in protein, phenolics, tocopherols, and carotenoids than other wheat varieties, making it a suitable functional food.

Hititler ve Frigler tarafindan da tarimi yapilmis olan Siyez bugdayina verilen ilk isim Hititçe bir kelime olan "Ziz" iken, daha sonralari "Siyez" ve bazen de "Kaplica" olarak adlandirilmistir.
