Cracked Olives are a traditional olive variety produced and consumed in the Aegean and Mediterranean regions of Türkiye.
In the Aegean region, cracked olives are commonly made from the Green Olive variety.
Green olives are low in acidity and are the highest quality olive type.

The water is changed frequently during this process.
After the bitterness has diminished, the Çekisge Green Olives are pickled using salt and lemon.
At this stage, the olives are left to ripen for a few weeks to develop their sweetness and flavor.
At the end of this process, they acquire a unique, fresh, slightly sour, and aromatic flavor.
