After the origin and quality of the raw beans, roasting is the next crucial step in producing a good cup of coffee. This generally refers to the dry heating of green coffee beans, which refines them and gives them their unique aroma and appearance. Like fine wine, coffee contains an extremely wide range of aromas: up to 1,000 of these substances combine to create a unique flavor for each cup. The right technique is just as important as a great deal of experience to obtain the best flavors from each cup. Coffee roasting is such a specialized craft that even championships are held. During the roasting process, the bean slowly changes color from its original yellow-green to its typical brown hue, while the internal water pressure causes it to double in size. The heat is responsible for the breakdown and conversion of carbohydrates, free amino acids, and proteins into a vast array of aromatic and bitter substances. Temperature and duration are crucial for roasting: the longer the roasting process, the more complex aromatic compounds can develop. Gentle, long-term roasting (over 20 minutes at a maximum of 200 C) ensures the breakdown of incompatible tannins, resulting in a very mild, aromatic coffee.

DESCRIPTION DU PRODUIT Après l'origine et la qualité des grains crus, la torréfaction est la prochaine étape décisive dans la production d'un bon café. Cela fait généralement référence au chauffage à sec du café vert, qui affine les grains de café et leur donne leur arôme et leur apparence uniques. Comme le bon vin, le café contient une gamme extrêmement large d'arômes: jusqu'à 1000 de ces substances se combinent pour créer une saveur unique pour chaque café. La bonne technique est tout aussi importante que beaucoup d'expérience afin d'obtenir les meilleures saveurs de chaque café. La torréfaction du café est un métier si spécialisé que même des championnats ont lieu. Pendant le processus de torréfaction, le haricot change lentement de couleur de sa couleur jaune-vert d'origine à sa couleur marron typique, tandis que la pression interne de l'eau du haricot lui fait doubler sa taille. La chaleur est responsable de la dégradation et de la conversion des glucides avec des acides aminés libres et des protéines en un gigantesque spectre de substances aromatiques et amères. La teperature et la durée sont décisives pour la torréfaction: plus le processus de torréfaction est long, plus les composés aromatiques complexes peuvent se développer.
