It is a fully refined type of iota carrageenan. It is obtained from algae. It is also called vegetable gelatin. It can be used instead of gelatin. It interacts with calcium ions and increases gel strength. It adds consistency to foods, binds water, and creates a gelatinous structure. It is especially good in milk desserts.

Example: This product is used to make gelatin-free panna cotta.

2 years in a cool, dry place, unopened. Once opened, the packaging should be sealed to prevent moisture. Store at room temperature away from direct sunlight.
