General Information:
Buckwheat grain is a plant from the sorrel family, whose production has become widespread in our country in recent years and whose name is rapidly gaining recognition among gluten-free products. It can actually be considered a plant seed. It is also known as Greçka. It is rich in copper, magnesium, phosphorus, and vitamins B1, B2, P, and E.
Today, it is preferred not only by celiac patients but also by those who care about their health and want a gluten-free diet.
How did we produce it?
We produce buckwheat in selected regions of Turkey, taking into account climate and soil conditions. This year, we are supporting buckwheat production in our region by collaborating with the Provincial Directorate of Agriculture. After our buckwheat grain is harvested, the husk is peeled and separated from the gluten using a specialized machine in a facility free of gluten. The buckwheat is then sifted, classified, and ground into flour in a gluten-free mill.
Beekeeping in our region was unfortunately negatively impacted by the fire. As far as we know, buckwheat pastures are being established in many countries abroad to support the development of beekeeping. Therefore, we are currently working on a joint project with research institutes and provincial directorates of agriculture. We are doing our best for our children and the younger generation to develop beekeeping and make the future more livable.
How should it be used?
Buckwheat flour is quite close to the Turkish palate in terms of flavor, but care should be taken to ensure it is raw. You can use this flour as an alternative gluten-free flour wherever you use flour, from bread making to cakes, cookies, and all pastries.
