The history of the mixiotes begins in pre-Hispanic Mexico, long before the arrival of European conquistadors. The ancient Mexicans, particularly the Aztecs, developed the technique of cooking in mixiotes, where maguey leaves were abundant. Mixiotes are steamed packages, traditionally made with meat, especially lamb or chicken, marinated in a rich chili sauce and wrapped in maguey leaves. The ancient inhabitants used maguey leaves to cook food underground. Over time, this technique evolved and was perfected, giving rise to the delicious mixiotes we know today. Cook Mixiote in a pressure cook or an Instant Pot until meat falls off bone, when is very tender!, approximately 30 minutes, then natural release for 15 minutes. Enjoy! * Recommended to use bone-in meat for added flavour, for example: Pork ribs, chicken legs, beef chuck roast, beef brisket, beef shank, short ribs, oxtail, beef stew meat, lamb or goat. You could use any other protein of your choice, or use it with vegetables only if you wish! * If you cook on a stove: For one kilo of meat, add 1 more cup of water. So 3 to 4 cups of water in total. When liquid starts to boil, turn flame to medium-low (2-3 on stove´s knob) and simmer for at least 2 hours.
