Glass Noodle Japchae Recipe

Quick and Easy Korean Japchae Recipe (Serves 2)

1. Soak Noodles 3.5oz (100g) for about 30 min

2. Slice beef 2.8oz (80g), 1/2 onion (30g), 1/2 carrot (40g), 1/3 squash (40g), shiitake mushrooms 1.4oz (40g), into pieces of 1.5 in.

3. Beat 2 eggs, thinly spread and cook using a non-stick pan. Slice into pieces of 1.5 in.

4. Sauce: Mix 1 Tbsp soy sauce, 1 Tbsp sesame oil, 1 Tbsp sugar and use 1/3 of this sauce to marinate the beef.

5. Cook the noodles, previously soaked in boiling water for 30 sec. and drain water.

6. Heat a non-stick pan on medium heat, coat with oil and stir fry the beef and vegetables.

7. Add noodles and sauce and stir fry.
