The long-awaited legendary Ethiopian coffee, Ethiopia - Banko Gotiti [Yirgacheffe], is back in Coffee Project's stock!To describe its taste:At first sip, Banko Gotiti offers a very clear bergamot flavor, accompanied by apricot, like drinking fruit juice.You can experience the citrus flavor of a classic Ethiopian coffee, but with a sweeter flavor.
It has low acidity, meaning sourness.It has a very high sweetness.

Natural Production Notes:Well-ripe, over-ripe, and 5 reddish, unripe coffee cherries are selected. The cherries are immersed in water tanks. They are soaked for 8 hours. This technique helps initiate the sugar reaction within the cherries, ultimately developing a honey-like flavor. After this process, the cherries are dried on raised African beds. 60 kg of cherries are laid on each bed, 5 cm thick. The raised beds are placed in locations with more wind and less sunlight. Drying continues for 28 days.
