Shape: Bucatini - Among the most popular shape in Italy, also known as perciatelli, is a thick spaghetti-like pasta with a hole running through the center. The name comes from Italian: buco, meaning ‘hole’ . Bucatini is common throughout Lazio, particularly Rome, where is prepared with the traditional ‘amatriciana’ or ‘carbonara’ sauce.
Cooking Time: 9/11 minutes.
Cooking Tips: Delicious with any sauce but especially good with fish or oil-based sauces, amatriciana and carbonara.
How To Prepare: Use 6 quarts of water for 1 lb of pasta. Bring water to a boil and add a pinch of salt and the pasta. Stir from time to time. Cook for 9-11 minutes, drain and season. Store in a cool dry place. Cooking time 11 min. Al dente 9 min.
