Archaeological excavations have determined that the mustard plant, known and used from the Hellenistic and Roman periods to the present day, originated in Western Asia and Europe. There are many species of mustard, and the most well-known are white mustard (Brassica alba), black mustard (Brassica nigra), and brown mustard (Brassica juncea).

White mustard grows wild in North Africa, the Middle East, the Mediterranean, and Europe. However, mustard is primarily grown in the foothills of the Himalayas. Mustard flowers are usually yellow. However, the spice produced from the mustard plant's seeds can be white, yellow, brown, or black. As a spice, mustard has a slightly sweet taste and is used in salads, meat dishes, cheeses, sandwiches, soups, or as a dip for sweetcorn. Especially popular in Bangladesh and India, mustard is also used in countries around the world.

Hardalin birçok türü bulunmaktadir ve en bilinen hardal türleri, beyaz hardal (Brassica alba), siyah hardal (Brassica nigra) ile kahverengi hardal (Brassica juncea) türleridir.

Beyaz hardal yabani olarak, Kuzey Afrika, Orta Dogu, Akdeniz ve Avrupa'da yetismektedir. Fakat hardal esas olarak Himalaya'nin eteklerinde yetismektedir. Hardal bitkisinin çiçekleri genellikle sari renklidir. Fakat, hardal bitkisinin tohumundan üretilen baharati ise, beyaz, sari, kahverengi ya da siyah renkli olabilmektedir. Baharat olarak hardalin tadi hafif tatlimsidir ve salatalarda, et yemeklerinde, peynirlerde, sandviçlerde, çorbalarda ya da süt misirin sosu olarak kullanilmaktadir.
