The red, showy fruits of sumac, standing upright like oak trees, are hard to miss. Compared to poison sumac (Toxicodendron vernix), Rhus coriaria is perfectly safe to consume and is considered a seductive and delicious spice used for thousands of years. Sumac berries are known for their tart and sour taste and are a unique substitute for lemon in various dishes. For as long as sumac has been a spice, it has also been used in traditional forms of healing for its healthful qualities.

The etymology of sumac dates back to several ancient languages, including French, Latin, and Arabic.pça translates to "red." A member of the cashew family, Anacaridaceae, it is a poison ivy cousin to sumac and mango. Sicilian sumac of Europe and staghorn sumac of North America can be identified by their pointed, compound leaves and erect spikes of dense, yellow-green flowers that mature into clusters of bright red, velvety seeds. Poison sumac, on the other hand, grows in swampy ecosystems and is distinguished by its creamy, white berries that hang down rather than standing upright.

Native to Southern Europe and Western Asia, Rhus coriaria is a small, deciduous shrub. There are approximately 35 species in this genus, which grow in subtropical and tropical regions worldwide. The berries are typically harvested in late summer or early autumn and then ground to a reddish-purple powder for later use. Often used as a pungent spice, sumac berry powder has a long history of use due to its beneficial properties and nutritional value. Sumac berries are considered energetically cooling.

Sumac was a popular spice in ancient Rome, with its sour, lemony, and astringent notes.Similar to salt, sumac berry powder enhances the natural flavors of foods. The pungent spice can be used as is or in combination with other spices, such as za'atar, a popular Middle Eastern spice blend. It shines especially brightly when sprinkled over a dish just before use and can be mixed into salad dressings to add bright, tart notes. Different parts of the plant make dyes in various colors, and the tannins from the bark were used in leather production.

A healthy North American tradition was to make an infusion of sumac berries for hot weather.This beverage, called "sumac-ade" or "pink lemonade," was sometimes flavored with orange peel or sweetened with sugar or honey. This infusion was popular during the hot summer months as a relief from the sweltering heat. Try sprinkling sumac berry powder over a variety of sauces, from hummus to simple olive oil to salads and rice dishes. Sumac, a beloved Middle Eastern spice, is often added to spice blends, marinades, and kebabs. Typical preparations of sumac powder also include an infusion or syrup with elderberries for an added boost of wellness during seasonal transitions. Sumac berry powder can even be made into a tincture.
