Bay leaves are typically dark green, shiny, and have a deep aroma. They have a strong scent and flavor due to the volatile oils they contain. They are sold dried and add flavor to dishes during slow cooking.Bay leaves are often used in cooking. They are frequently used to flavor meat dishes, fish, vegetables, and soups. They can also be used to add aromatic flavor to salad dressings, pickles, and some beverages.

Bay leaf is a plant with a bitter and pungent taste. Its spicy aroma comes from compounds such as eugenol and ethyl erythrin. Bay leaf has a low fat content and therefore a low calorie value. One gram of bay leaf contains:
