Dill leaves are dried dill leaves that are used as a flavoring. They can be used to enhance fish (raw or cooked) and seafood, but also meat stews, eggs, potatoes and vegetables, rice. Dill pairs perfectly with certain foods such as apples (caramelize apples with butter and sugar with added dill seeds), carrots and onions, fish, pork or beef goulash by replacing caraway with dill and serving with a generous portion of crème fraîche or with pita bread. Dill tops or seeds are used, for example, to flavor canned cucumbers or pickles in the United States. Indeed, although the aromatic compounds in dill are not water-soluble, the long fermentation process facilitates their dissolution in the brine. The main aromatic compound in dill is D-Carvone, which has a pleasant, fresh, floral aroma and notes of menthol, rye, and aniseed licorice. The flavor of dill seeds is reminiscent of a blend of anise and a mild version of caraway, which has a herbaceous aroma with lemony and slightly woody notes. Les sommités ou les graines d'aneth sont utilisées par exemple pour aromatiser les conserves de concombres ou de cornichons aux Etats-Unis. En effet, bien que les composés aromatiques de l'aneth ne soient pas hydrosolubles, le long processus de fermentation facilite leur dissolution dans la saumure. Le principal composé aromatique de l'aneth est le D-Carvone qui se caractérise par un agréable parfum frais et floral et qui possède des notes de menthol, de seigle et de réglisse anisé. La saveur des graines d'aneth évoque un mélange d'anis et d'une version douce de carvi dont il possède l'arôme herbacé aux notes citronnées et légèrement boisées. On y décèle également une légère touche d'amertume.
