Dong Ding is a very famous tea produced on the island of Taiwan. Its name which translated means frozen peak gives us an indication of its origin, in fact it refers to a mountain in the Lugu region in Nantou prefecture. Dong Ding is therefore a mountain oolong that is produced from tea plants that were imported from China more than a century ago from the Wuyi mountains where there is an equally thriving production of oolong. This tea can have many forms once its processing is finished as it can take on slightly different oxidations, roasting or quite different cooking stages based on the manufacturer's instructions. What we present to you is a Dong Ding with an oxidation of approximately 20 which was then well roasted taking on a light shade of brown color reminiscent of the bark of a young tree. Even during the tasting, in fact, one of the first flavors we will encounter is that of wood which, however, will soon decrease in intensity to reveal a more toasted component similar to that of dry biscuits. This tea is also able to leave a pleasant oily sensation in the mouth before ending in a hazelnut aftertaste. Il suo nome che tradotto significa cima ghiacciata ci dà un'indicazione sulla sua origine infatti esso fa riferimento a un monte nella regione del Lugu nella prefettura di Nantou. Il Dong Ding quindi è un oolong di montagna che viene prodotto a partire da piante di tè che furono importate dalle Cina più di un secolo fa dai monti Wuyi dove vi è un'altrettanta florida produzione di oolong. Questo tè può presentare molte forme una volta finita la sua lavorazione poiché può assumere ossidazioni leggermente diverse, arrostitura o fasi di cottura abbastanza diverse in base alle disposizioni del produttore. Quello che vi presentiamo è un Dong Ding con un'ossidazione di circa il 20 che è stato poi ben arrostito assumendo una leggera sfumatura di colore marrone che ricorda quella della corteccia di un giovane albero. Anche durante la degustazione infatti uno dei primi sapori che incontreremo è quello di legno che però dopo poco scenderà di intensità per rivelare una componente più tostata simili a quella dei biscotti secchi. Questo tè è anche in grado di far percepire in bocca una gradevole sensazione oleosa prima di terminare in un retrogusto di nocciola.
