Our sardines are hand-sorted, once before cooking and a second time when canning, to offer impeccable quality to our consumers. We use 2 preparation methods depending on the recipes. A first method where our sardines are headed and gutted by hand before being placed on a grill for the frying stage in organic sunflower oil, before being drained and then canned by hand. The second method is used for natural recipes, where the sardine is cooked in water before joining its can, sardine always placed manually. INGREDIENTS Mackerel fillets 151 gOur fish are carefully prepared by staff trained in our know-how, which dates back over 190 years in Douarnenez. Our sardine fishermen have inherited a passion for the sea and the ancestral gestures of several generations of 'Penn Sardin', the Breton name for the headdress and the inhabitants of Douarnenez, meaning 'Sardine heads'. Nos sardines sont triées à la main, une première fois avant cuisson et une seconde fois au moment de l'emboîtage, pour offrir une qualité irréprochable à nos consommateurs. Nous utilisons 2 modes de préparations en fonction des recettes. Un premier mode où nos sardines sont étêtées et éviscérées à la main avant d'être placées sur une grille pour l'étape de friture à l'huile de tournesol bio, avant d'être égouttées puis emboîtées à la main. Le second mode est utilisé pour les recettes au naturel, où la sardine est cuite à l'eau avant de rejoindre sa boîte, sardine toujours déposée manuellement. INGRÉDIENTS Filets de maquereaux 151 gNos poissons sont soigneusement préparées par un personnel formé à notre savoir-faire vieux de plus de 190 ans à Douarnenez . Nos sardinières ont reçu en héritage la passion de la mer et les gestes ancestraux de plusieurs générations de 'Penn Sardin', nom breton de la coiffe et des habitants de Douarnenez signifiant 'Têtes de sardines'.
