The products we collect from mountain and plain villages in October, November, and December, ripen in the fertile soil and winds of the Aegean.
After being sorted by size in our factory, they are poured into olive cisterns, their low-salt brine is adjusted, they are stone-pressed, and they are left to ripen.
All of our products are produced using a natural fermentation method, without using any chemicals or additives. Nothing is used other than water and salt.
Since it is produced using a completely natural production principle, it matures after a waiting period of at least 8 months.
We offer our valued customers natural olives, flavored through their natural process, without additives, instead of accelerated ripening olives, also known as heated olives.
