Elkin Guzman grows coffee on 31 hectares at Finca El Mirador in Palestina, Huila. Huila's high altitude and fertile soil provide ideal growing conditions for specialty coffees. Elkin is experimenting with innovative processing methods, such as Koji Natural Aerobic, to further differentiate its coffees.

The coffee cherries are carefully hand-harvested, and only perfectly ripe cherries are used. After fermentation, the cherries are left to dry in the sun. The cherries are raked 4 to 6 times daily to ensure thorough drying. Drying takes approximately 12 to 18 days.
