Espresso History
The idea of passing boiling water vapor through coffee was first implemented in 1820 by the Frenchman Bernard Rabaut. This method soon became popular among coffee sellers. Another Frenchman, Edwarda Loysel De Santais, invented a machine that used this method and introduced it at the Paris Fair in 1855.
Shortening the coffee-making process was crucial for coffee vendors to provide faster service. Thus, the idea of applying pressure to water emerged. German Gustav Kessel was the originator of this idea and patented it in 1878. Following his experiments, Kessel began making coffee quickly by forcing water vapor through a bed of coffee under pressure and pouring it into the cup.
Seeing the popularity of coffee in the country, another Italian entrepreneur, Teresio Victoria Arduino, first set out to promote espresso. He claimed that espresso was the best coffee ever made, the technique used in its preparation, and especially its speed, were key factors in Arduino's promotion. Thus, the first marketing step in espresso history was taken. In fact, the poster of the man in the yellow coat, using an Arduino to open a train door and make espresso from the machine outside, was so influential that it's still used on the walls of many coffee shops in Italy today. The idea of "coffee as fast as a bullet train" is perhaps the best expression ever coined for espresso. After all, both are "express."
These machines, finalized after much effort and dedication, are now a part of daily life.
"The most perfect definition of coffee is espresso." (Ernesto ILLY)
