Our vinegars are produced traditionally, using a completely homemade method, and do not contain or require any preservatives. Vinegar contains living organisms and is always alive.
When stored in a cool, dark place under appropriate conditions, it has a very long shelf life. The growth we call the mother that forms on the surface is the organism that keeps the vinegar alive. The mother can continue to grow when you purchase the products. This is not mold or kef, but the essence of the vinegar, and it is very valuable, proving the naturalness of the vinegar.
