It is produced from the thorns of the Kenger tree found in nature above an altitude of 900 m in the foothills of the Taurus Mountains in Silifke.

Kenger coffee, a decaffeinated coffee, is served similarly to Turkish coffee. However, adding 0 milk to the water makes it lighter and leaves a creamy taste on the palate.

The production process is as explained in the following section. The thorns of the wild artichoke (also known as camel thorns) are collected and sifted during the summer months when they are ripe. The sifted acanthus seeds are roasted over a wood fire until they reach coffee consistency without any additives. The roasted seeds are hand-ground in stone mortars and sifted through fine sieves to separate the membrane and shell (it is known that it was also consumed as tea in the past). Dried green chickpeas, roasted in a tandoor oven in ash and turned into flour, are added in proportion to the amount. They are then stored in airtight, double-layered, food-grade paper bags specially produced for coffee.
