What is Freeze Drying?

Freeze-dry is the most current and advanced drying technology available today. Freeze-dry technology freezes food, then directly sublimates the frozen water inside the food under low temperature and low pressure, removing water from the food.

Products that begin the drying process frozen are reduced to 2 moisture content through sublimation under the low pressure and low temperature environment created within the machine. During this process, products that do not enter the liquid phase do not experience any deformation such as wrinkling or melting. The shapes of dried products are almost identical to their fresh forms.

Foods exposed to high temperatures lose a significant amount of their nutritional and vitamin value, aroma, odor, and color. Products dried using freeze-drying at low temperature ( 40 C) and low pressure ( 13 Pa) retain their nutritional and vitamin value, aroma, odor, color, and shape.

Yuksek sicakliga maruz kalan gidalar besin ve vitamin degerlerini, aromasini, kokusunu ve rengini buyuk oranda kaybederler.
