Frequently Asked Questions
Why is early-harvest olive oil bitter?Early-harvest olive oil is produced from unripe olives. Unripe olives have a high polyphenol content and a correspondingly bitter taste. Therefore, early-harvest olive oil is notable for its aroma, which leaves a slightly bitter aftertaste. What color is early-harvest olive oil?Early-harvest olive oil is obtained by picking and pressing the olives while they are still green. However, the color of the olive oil varies depending on the type of olive. Therefore, it is possible to encounter early-harvest olive oil in different colors, such as golden yellow or dark green. What should be the acidity level of early-harvest olive oil?The maximum acidity level of olive oil types is determined by the Turkish Food Codex Communiqué on Olive Oil and Pomace Oil. According to this circular, the free fatty acid content of early-harvest cold-pressed olive oil, which falls into the category of natural extra virgin olive oil, must not exceed 0.8 grams of oleic acid per 100 grams. What is the difference between cold-pressed olive oil?If the temperature of the olive paste during the pressing process is below 27 degrees Celsius, it is called cold-pressed if it is above 27 degrees Celsius, it is called hot-pressed. Because the lower temperature of the product helps preserve the polyphenol content of the olive oil, cold-pressed olive oils are more nutritionally rich than hot-pressed olive oils.Does early-harvest cold-pressed olive oil freeze?Early-harvest cold-pressed olive oil, which is completely natural and free of any chemicals, can be frozen. However, the freezing temperature of olive oil may vary depending on the type of olive, region, and production method. Therefore, a specific freezing temperature cannot be specified for olive oil.
