
Mandarin Stir-fry with Bird’s Eye Broccoli
Serves: 4-6 | Prep time: 10 min
Cooking time: 15 min | Total time: 25 min
Remove sauce packet from 1 package Mandarin Orange Crispy Chick’n and place packet in a bowl of hot water for 3 minutes to defrost. Empty into a bowl and stir in 1 tsp fresh grated ginger and ¼ tsp red pepper flakes. Set aside.
Preheat 2 Tbsp oil in a non stick frying pan over medium heat. Add frozen chick’n and sauté, turning frequently, until golden and crispy, about 6 to 8 minutes. Remove to a plate.
In same frying pan, over medium heat, sauté red pepper and broccoli for 1 minute. Add water, cover and steam until peppers are just soft and broccoli is bright green, about 2 minutes. Remove lid and stir in chick’n and sauce. Cook, stirring constantly, until warmed through and well coated in sauce.
Garnish with 1 Tbsp sesame seeds. Serve with steamed rice.
Chef Tip: This stir fry works well with all types of vegetables. Try thinly sliced carrot, bok choy and snow peas.

Quick and Easy Meatless Lasagna
Serves 8 | Prep time: 10 minutes
Cooking time: 30 min | Total time: 40 minutes
Preheat oven to 375º F. In a skillet, heat up 2 cups of the marinara sauce until simmering, then add 1 bag frozen Gardein beefless round. Add 1 additional cup of sauce and let simmer for about 3 minutes.
Meanwhile, in a medium size bowl, add 24 oz cottage cheese (or vegan option), 1 egg (or vegan option), 1 tsp oregano, 1 tsp basil, and about 1/4 cup of mozzarella (or vegan option) and stir together.
In a 13×9 pan, spread a thin layer of the sauce mix on the bottom of the pan, then lay 4 oven-ready noodles across, then a layer of cottage cheese mix, and sauce mix. Repeat this twice. On the final layer just add the remaining sauce mix (there wont be too much left, just a thin layer). Then top with the remaining layer of cheese.
Cover with foil and cook in the oven for about 25 minutes. Finish 5-10 minutes uncovered.
