2 tbsp extra-virgin olive oil
½ cup onions (chopped)
2 tbsp garlic (minced)
1/2 cup Multigrain Rice
1 cup chickpeas (rinsed and drained)
½ teaspoon kosher salt
Chopped jalapeño

Multigrain Rice with Chickpeas Recipe

Directions For Cooking:

In a medium saucepan, heat oil and saute onions until tender. After 2 minutes, add garlic and cook for another minute. Add multigrain rice and stir constantly, until grains are toasted or for three minutes.

Add 3 cups of water, chickpeas, salt, and pepper to taste. Bring the mixture to a boil, and lower the heat to sim. Cook the rice for 20-25 minutes until they are cooked through. Turn the heat off and let the rice sit for 30 more minutes. Uncover, plate the rice, and serve. Garnish with jalapeño if desired.
