You Will Need: 

• 2 eggs 
• 1/3 cup melted unsalted butter or coconut oil 
• 1 teaspoon vanilla extract 

1. Preheat oven to 350°F. 
2. Line an 8x8 inch baking pan with parchment paper and spray with nonstick spray. Make sure excess parchment paper hangs over the sides for easier removal. 
3. Pour contents of the mix into a bowl and stir with a spoon. 
4. Add the eggs and then the butter or oil and vanilla extract. Mix thoroughly. 
5. Pour the batter into the baking pan. Please note: if batter seems thick please make sure to use back of spoon and spread evenly in pan. 
6. Bake for 18-24 minutes on the middle rack of your oven. 
7. A toothpick should come out clean and the edges should be firm and golden. Please keep an eye out so it does not burn. 
8. Let the blondies cool completely or they will fall apart. Once cooled, Enjoy!
