To obtain the healthiest and most delicious form of olive oil, the green olives collected were transported in refrigerated vehicles and, within a few hours, were cold-pressed at a maximum temperature of 24 degrees Celsius in our state-of-the-art facility without heating the machines. They were then transformed into Early Harvest olive oil.

Because the olives are processed before they darken and ripen, the resulting olive oil contains high levels of polyphenols and antioxidants and is highly nutritious.

Approximately 12 kilos of olives yield 1 liter of olive oil. The resulting oil is both fruity and, because the olives are very green, highly bitter and pungent, making it a potent oil.

Early harvest olive oil is considered a source of healing with its many benefits. Raw consumption is recommended to maximize the benefits of its antioxidant properties.

You can use it in all cold dishes, especially cold dishes and salads.

According to the results of our internationally accredited laboratory, the acidity of our olive oil is 0.3 and its polyphenol value is 349.
