Mulberry must (mulberry extract) and mulberry molasses (in large quantities) obtained from the mulberries of Gümüshane are combined with flour, natural sugar, milk, and honey, and cooked to make pestil herlesi.

The resulting pestil herlesi is spread out on a cloth and dried in the sun to create a rich molasses-based pestil.
