Iberian shoulder de Bellota is a 100% acorn fed, free-range cured leg produced in Spain. The shoulders from the slaughtered pigs are salted and left to begin drying for two weeks, after which they are rinsed and left to dry for another four to six weeks. The curing process takes at least twelve months, although La Prudencia cures their Iberico shoulders for over 60 months. Intensely flavorful, each slice of Shoulder de Bellota is striking in both its aroma and appearance. Offering a deep red color interlaced with the white marbling of intramuscular fat: this cured meat is truly a thing of beauty. Rich and bold in flavor that can be purchased with boneless or pre-sliced offering a truly authentic taste of Spain in its most convenient form.
