Featured Recipe: Curried Chicken Fricassee with Corn and Basil
Heat casserole pot to medium heat. Sauté 4 chicken thighs in 3 tbsp. of canola oil until lightly colored. Add 3 tbsp. of diced shallots and 1 tbsp. of ginger, finely diced. Sauté until shallots are soft. Add curry and sauté until fragrant. Deglaze with ½ cup of white wine and cook for 2 minutes. Add 1 cup of Imagine Organic Creamy Potato Leek Soup, 1 cup of Imagine Organic Free Range Chicken Broth, Low Sodium, and 1 cup of Coconut Dream Coconut Drink Original Enriched Unsweetened, bring to simmer, and cook for 18 minutes. Add 1 cup of blanched corn and tomato and simmer for 4 minutes. Finish with 1 tbsp. of fish sauce, 1 tbsp. of lime juice, and 6 large basil leaves.
