OLOS is an extra virgin olive oil obtained by cold pressing Bosana cultivar olives from trees grown in the Nurra region of northwestern Sardinia, an area dedicated for centuries to the production of this precious and essential food in the Mediterranean diet. The harvest was carried out manually using traditional methods, without the use of mechanical shakers, in order to avoid damaging the trees and their root systems. The olives were pressed a few hours later to guarantee a very high product quality, preserving all the organoleptic characteristics of this rare, endemic crop of the island. The result is a bright yellow oil with greenish highlights, dense, and rich in balsamic aromas reminiscent of artichoke, green pepper, and Mediterranean pepper. On the palate, it is full-bodied, enveloping, very spicy, and slightly peppery, with a very long finish. The finish is balanced and characterized by low acidity. OLOS Extra Virgin Olive Oil is ideal for Mediterranean salads, first courses with bottarga and shellfish, grilled vegetables, grilled prime cuts of meat, or Catalan shellfish dishes. It is excellent served in traditional carasau bread with a pinch of salt and rosemary or oregano. Annual production is limited to 2,000 50cl bottles and 1,000 25cl bottles. DESCRIPTION DU PRODUIT DESCRIPTION DU PRODUIT OLOS est une huile d'olive extra vierge obtenue par moliture à froid d'olives de cultivar Bosana, issues de plantes mises en demeure sur le territoire de la Nurra, dans le nord-ouest de la Sardaigne, zone depuis des siècles voquée pour la production de ce précieux aliment indispensable dans le régime méditerranéen. La récolte a été effectuée manuellement selon des méthodes traditionnelles, sans l'utilisation de secoueurs mécaniques, afin de ne pas causer de traumatismes aux plantes et à leur système racinaire. L'attraction au broyeur a eu lieu quelques heures plus tard pour pouvoir garantir une qualité de produit très élevée, qui gardera intactes toutes les caractéristiques organoleptiques de cette rare culture endémique de l'île. Le résultat est une huile jaune vif avec des reflets verdâtres, dense, riche en parfums balsamiques qui rappellent l'artichaut, le poivre vert, la tache méditerranéenne.
