During the first week of May, unripe, green, freekeh walnuts are harvested. The walnuts should be firm enough to be about the consistency of a cucumber and easily inserted with a fork. First, the walnuts are quickly peeled from their shells by skilled hands using a sharp knife. They are then scored and the water is changed several times.
