Is einkorn really the ancestor of all wheat species?

Einkorn, a type of wheat that dates back 12,000 years according to some sources and 10,000 years according to others, is known as the ancestor of modern wheat.
It is the only type of wheat that has not been genetically modified.
Einkorn wheat is produced in Kastamonu and its surrounding districts.
Einkorn wheat is used in a variety of bulgur, flour, and baked goods, including einkorn noodles, einkorn pasta, and einkorn bread.

The main characteristics that distinguish einkorn wheat from other varieties are its single spikelet and dense husk structure.

It is a very difficult product to process.
The thick outer husk results in a loss of up to 30 during the conversion of the product into einkorn flour.
When this product is converted into bulgur, the loss reaches up to P-60.
Siyez wheat and its processed form, Siyez bulgur, have been produced in large quantities in Kastamonu in recent years.
Kastamonu, with its harsh winters, is the region in Turkey where Siyez wheat grows most abundantly and most easily.
Siyez is a wheat variety with a very low gluten content.
Siyez contains much more vitamin A than other modern wheats.
It is the only wheat variety that has not been genetically modified.
It has a high folic acid content, zinc, and carotenoids, and is easily digestible.
