What is Koji Kin? The Koji-Kin (or Tane Koji) are the spores of the Aspergillus Oryzae used to make Koji. To make Koji you need to grow these spores in cooked rice or any other substrate you like, the possibilities are endless!! The Koji is responsible for providing the enzymes needed to break down the polysaccharides in rice. This is the same function as malted grains in the beer world. Once the starch has been converted into sugar, the yeast uses this sugar to produce alcohol. The use of Koji in Japanese gastronomy: There are more than 1000 sub-types of Koji-Kin. Koji-Kin is one of the foundations of Japanese and Asian cuisine, as it is used to: Meals: Soy sauce, Rice vinegar, Amazake, Natto and Miso. Drinks: Sake, Shochu and Awamori. To inoculate 1 kg of rice you need at least 3 grams of koji. The Koji Kin Kensho Sake comes in sachets of 10 grams. Ingredients:Koji-Kin (Aspergillus oryzae rice flour) Instructions: Aspargillus spores are spread over parboiled rice and the mixture is allowed to grow for about 48 hours. INGREDIENTS Koji-Kin (Aspergillus oryzae rice flour) INSTRUCTIONS FOR USE Mix 10 g of Koji spores with 1 kg of cooked rice and let it ferment at room temperature for 24-48 hours to make a starter for various Japanese recipes such as soy sauce, rice vinegar, amazake, natto, miso, sake, shochu or awamori.
