KIKKOMAN TAMARI Glutenvrije sojasaus wordt geproduceerd uit water, sojabonen, zout en gedistilleerde azijn, zonder gebruik van tarwe, via een goed brouwproces dat bestaat uit enzymatische reacties van specifieke micro-organismen. Tijdens de pekelfermentatie worden alle eiwitten uit sojabonen volledig gehydrolyseerd tot aminozuren en laagmoleculaire peptiden door de werking van proteolytische enzymen uit de geproduceerde Koji-schimmel. Daarnaast worden de unieke smaken en aroma's van KIKKOMAN TAMARI Glutenvrije Sojasaus geproduceerd door het fermentatieproces. De vloeibare sojasaus wordt gescheiden van de gerijpte puree door te drukken en vervolgens gepasteuriseerd voordat deze wordt gevuld.
