In Yemen, three types of coffee are produced: Ismaili, Mocha Sanani, and Mocha Mattari. Each has its own unique aroma. These beans, suitable for many brewing methods and roasting profiles, are grown in the Bani Ismail region at altitudes of 2,000 meters and above. Traditional methods, dating back centuries, are used in coffee production. Coffee cherries are dried on house roofs and separated from the beans in drums. Peaberry beans are individually separated by hand. They produce very successful results in a wide range of applications, from filter coffee to Turkish coffee.
