Star anise (Illicium verum) has been in Asia for approximately 3,000 years. Known for this period, it belongs to the magnolia family and thrives primarily in Vietnam and southern China. The star-shaped fruits burst open at the midrib, revealing bright red seeds. The fruits are then sun-dried, losing about three-quarters of their weight. Stored in a dry, airtight container, they remain fresh for several years. A star anise tree can live up to 100 years and can be harvested from about 7 years of age. It produces up to 40 kg of fruit per year. Star anise has a sweet and powerful aroma similar to lakritz and is suitable—used as a spice—for dishes such as duck or goose. It is also used in the making of pepper tarts or to enhance mulled wine. Star anise is also an integral part of some Indian curries and is often used as an ingredient in incense sticks or powder, with a powerful yet invigorating and fresh fragrance. Due to its high essential oil content (4-5 ), star anise is used not only as a spice but also in natural healing. Traditional Chinese medicine recommends both internal and external application. A tea can be made by adding 1 to 2 teaspoons of star anise to 500 ml of hot water. Star anise is free of pollutants and comes from controlled cultivation it has a shelf life of at least 24 months after purchase.
