Bayburt Honey is produced by the Caucasian bee (Apis mellifera caucasica) and Caucasian hybrid bees.

Bayburt province, which forms a transition zone between the Black Sea Region and the Eastern Anatolia Region and has an average altitude of 1750 m Its geographical structure, climate, and vegetation make it extremely suitable for beekeeping. This flora includes honey plants with high nectar quality, such as clover, sainfoin, vetch, thyme, astragalus, sage, wild sainfoin, nectariferous, acacia, mullein, and others.
